Starbucks Lemon Loaf



This is a Top Secret recipe version of Starbucks Lemon loaf.  I have never had one, so not sure how this compares...it was good though.

Ingredients:
1 1/2 cups FLOUR
1/2 teaspoon BAKING SODA
1/2 teaspoon BAKING POWDER
1/2 teaspoon SALT
3 EGGS
1 cup SUGAR
2 tablespoons BUTTER; Softened.
1 teaspoon VANILLA
1 teaspoon LEMON EXTRACT
1/3 cup LEMON JUICE
1/2 cup OIL

Lemon Icing Ingredients:
1 cup POWDERED SUGAR
2 tablespoons WHOLE MILK (I used Skim)
1/2 teaspoon LEMON EXTRACT

Instructions:
Combine flour, baking soda, baking powder and salt in a bowl.
Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice in a medium bowl.
Pour wet ingredient into the dry ingredients and blend until smooth.
Add oil and mix well.
Pour batter into a well greased 9x5-inch loaf pan.
Bake at 350 degrees for 45 minutes or until a toothpick stuck into center of the cake comes out clean.
Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.
When the loaf is cool, remove it from pan and frost the top with the icing.
Let the icing set up before slicing.

Quick and Easy Breadsticks

1 1/2 C warm water
2 T sugar
1 T yeast
1/2 t salt
3 1/2- 4 C flour
1/4 C butter (not that nasty margarine crap)
3/4 C grated Parmesan or mozzarella cheese
Johnny's Garlic Seasoning

1. Mix the water, sugar and yeast together in a measuring cup or in the bottom of your mixer. Let it sit for 5 minutes.
2. Add the salt and the flour, one cup at a time, until it is well incorporated. Mix on high for 5 minutes. Let the dough rest for 5 minutes.
3. Melt the butter and pour half of it into a  large cookie sheet.
4. Place the dough in the center of the pan. Let it sit for 2 or 3 minutes. Letting the dough rest makes it MUCH easier to shape.
5. Spread the dough out flat onto the pan until it reaches all of the edges. 
6. Pour the other half of the butter onto the dough. Spread it around. Sprinkle the Johnny's Garlic Seasoning all over the dough, and then the Parmesan cheese.
7. With a pizza cutter cut the dough into three rows lengthwise, and then into about 12 little height wise rows.
8. Put the pan into a 170 degree oven for about 7-10 minutes. The breadsticks should rise about 1 inch.
9. Turn you oven up to 350 and bake for about 12 minutes, or until golden brown.
10. When they come out of the oven let them sit and rest again for about 5 minutes. Then redefine your cutting lines with the pizza cutter.

Banana Bread

 Ingredients:
1/2 c. butter
1 c. sugar
2 eggs
1 T. vanilla
1 3/4 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 sour cream
1 tsp. lemon juice
1 cup mashed banana

Directions:
Add ingredients to bowl.
Stir to combine.
Pour into a loaf pan that has been sprayed with cooking spray.
Bake in a 350 degree oven for 50 to 55 minutes.

Homemade Soft Pretzel Bites



Ingredients:

Soft Pretzels:
1 1/2 cups warm water
2 tablespoons light brown sugar
1 package active dry yeast (2 1/4 teaspoons)
3 ounces unsalted butter, melted
2 1/2 teaspoons kosher salt
4 1/2 to 5 cups all-purpose flour
Vegetable oil
3 quarts water
3/4 cup baking soda
1 whole egg, beaten with 1 tablespoon cold water
Coarse sea salt

Directions:

For the Pretzels: Combine the water, sugar, yeast, and butter in the bowl of a stand mixer and mix with the dough hook until combined. Let sit for 5 minutes.
Add the salt and flour and mix on low speed until combined. Increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 3 to 4 minutes. If the dough appears too wet, add additional flour, 1 tablespoon at a time. Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.
Oil a bowl with vegetable oil, add the dough and turn to coat with the oil. Cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.
Preheat the oven to 425 degrees F.
Bring the water to a boil in a small roasting pan over high heat and add the baking soda.
Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 equal pieces, about 4 1/4 to 4 1/2 ounces each. Roll each piece into a long rope measuring 22 inches and shape. Cut the dough into one inch pieces to make the pretzel bites. Boil the pretzel bites in the water solution in batches. We did about 15 bites at a time. Boil for about 30 seconds. Remove with a large slotted spoon. Place pretzel bites on a baking sheet that has been sprayed with cooking spray. Make sure they are not touching. Brush the tops with the egg wash and season liberally with the salt. Place into the oven and bake for 15 to 18 minutes until golden brown.
Remove to a baking rack and let rest 5 minutes before eating. Serve with cheese sauce.

*If you want to make cinnamon and sugar pretzel bites-instead of adding salt, sprinkle the bites with cinnamon and sugar. For the frosting mix-soft cream cheese-about 3 T, powdered sugar, a teaspoon of vanilla extract, and a little bit of milk. Whisk together. Add more milk if it is too thick, if it is too thin, add more powdered sugar. I don't measure. I just guess until the consistency is right.*

Peanut Butter Banana Bread


Recipe adapted and photo from Joy the Baker

1 1/2 cups mashed ripe bananas
1/3 cup sour cream
1/3 cup creamy all-natural peanut butter
3 tablespoons butter, melted
2 large eggs
1/2 cup granulated sugar
1/2 cup brown sugar
1 cup whole wheat flour
1/2 cup all-purpose flour
1/4 cup ground flaxseed meal
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice

 Preheat oven to 350 degrees F.  Grease and flour a 9×5-inch loaf pan.  Set aside.
In a large bowl, whisk together flours, flaxseed meal, baking soda, salt, ground cinnamon and ground allspice.
In a medium bowl, whisk together  mashed bananas, sour cream, peanut butter and melted butter.  Whisk in eggs and sugars.  Blend.
Pour the wet mixture into the larger bowl with the dry ingredients.  Fold together with a spatula.   Pour the batter into the prepared baking pan and cake for 55 to 65 minutes, or until a skewer inserted into the center of the loaf comes out clean.
Remove from the oven and allow to cool in the pan for 20 minutes before running a butter knife along the edges of the pan and inverting the bread onto a wire rack to cool completely.
This bread lasts, well wrapped at room temperature,for up to 4 days.  It is also great to store, well wrapped, in the freezer.

Bacon Cheese Pull Aparts

 

Ingredients

  • 1  egg
  • 2 tbsp milk
  • 1  (16.3-oz.) can Pillsbury® Grands!® Flaky Layers Refrigerated Original Biscuits
  • 1/2 cup Hormel Real Bacon Bits
  • 3  oz. (3/4 cup) shredded Cheddar cheese
  • 1/4  cup finely chopped green onions (4 medium)

Directions

  1. Heat oven to 350°F. Spray 9x13 glass baking dish with cooking spray. In large bowl, beat egg and milk with wire whisk until smooth.
  2. Separate dough into 8 biscuits; cut each into quarters. Gently stir biscuit pieces into egg mixture to coat evenly. Fold in bacon, cheese and onions. Spoon mixture into sprayed dish; arrange biscuit pieces in single layer.
  3. Bake at 350°F. for 23 to 28 minutes or until golden brown. Cut into squares.

Hot Ham and Cheese Pinwheels

1 1/2 C warm water
2 T sugar
1 T yeast
1/2 t salt
4-4 1/2 C flour
1 pound deli ham, sliced thin
2 C cheddar cheese, shredded

1. Pour 1 1/2 C warm water into your stand mixer and preheat your oven to 170 degrees. (You read it right...170 degrees is all you need.)
2. Add 2 tablespoons sugar and 1 tablespoon yeast. Turn the mixer on low for about 30 seconds allowing the ingredients to combine. Let it rest for 5 minutes, or until it gets all bubbly.
3. Add 1/2 teaspoon salt and 2 cups flour. Turn the mixer on to low and let the flour mix in. Add the rest of the flour (2 1/2 cups worth) one cup at a time. When the dough pulls itself away from the side of the bowl, you have enough flour.
4. Turn the mixer to medium speed and allow it to mix for 5 minutes.
5. Spray your counter with cooking spray, divide the dough into two equal parts and allow them to rest on the counter for 5 minutes. Don't skip this step.
6. After the dough has rested, roll out into a large rectangle.
7. Cover it with half of the ham and sprinkle it with 1 cup of cheddar cheese.
8. Roll the dough up starting at the longer end.
9. Spray a large knife with cooking spray and slice the roll into 12 rounds.
10. Place each pinwheel onto a large cookie sheet that has been sprayed with cooking spray.
11. Repeat steps 6-10 with the other half of the dough.
12. Place both pans into your warm 170 degree oven for about 10 minutes, or until they start to rise just a bit. You don't want them to get super puffy, you just want the dough to have the chance to expand a little, like you see in the picture above.
13. Turn the oven up to 350 degrees (don't take the pans out of the oven) and let the pinwheels bake for about 15 minutes or until golden brown along the top and bottom.
14. Take the pans out of the oven and let the pinwheels rest for about 5 minutes.

Parmesan Pull Aparts

2 cans (7.5 oz each) of refrigerated Homestyle Biscuits
3 tablespoons Butter, melted
1 teaspoon Garlic Powder
1/2 teaspoon dried Parsley
1 teaspoon dried Minced Onion
1 tablespoon grated Parmesan Cheese
1/3 cup shredded Mozzarella Cheese



Directions: Preheat oven to 425 degrees. In a small bowl mix together the melted butter, garlic powder, dried parsley, minced onion and parmesan cheese. Spread mixture in the bottom of a 9 inch glass pie plate. Sprinkle the shredded mozzarella cheese evenly over the top of the butter mixture.

Remove biscuits from cans. Place biscuits close together over the top of the cheese and butter mixture. (You might not need all the biscuits. I had a few left over that would'nt fit)

Bake biscuits in the oven for 12 minutes or until golden brown. Remove and let stand 3 minutes. Turn biscuits upside down onto a serving plate. Serve warm!

Parmesan Garlic Rolls



Ingredients:
24 frozen Rhodes rolls
5 tbsp. melted butter
parmesan cheese-to taste
garlic salt-to taste

Directions:
Place frozen rolls in well greased muffin tin. Brush butter on tops with a pastry brush-this was Destrie's job.
Sprinkle parmesan cheese and garlic salt on top.
Let rise according to the directions.
Bake according to the directions on roll package.

Pumpkin Bread

Ingredients:
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
2 teaspoons pure vanilla extract
2 1/2 cups sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons kosher salt
2 tablespoons pumpkin pie spice

Directions:
1. Preheat oven to 350 degrees F. Grease and flour two loaf pans.
2. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, combine pumpkin, eggs, oil, water, vanilla and sugar until well blended.
3. In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice until well combined.
4. Stir the dry ingredients into the pumpkin mixture until just blended. Pour batter into the prepared pans.
5. Bake in preheated oven for 60-70 minutes or until a toothpick inserted in the center comes out clean.

* I added 1/2 bag of chocolate chips

Magleby’s Rolls


This recipe is a copycat recipe for a roll they  make at a restaurant called Magleby’s Fresh in Provo, Utah.  I have never eaten at this restaurant, but  Your Home Based Mom has.  I found this recipe on her blog.  Now I have to make a trip to Provo to check this place out!
These rolls are so easy to make.  You make them with Rhodes frozen dinner rolls.


1 bag of frozen dinner rolls
Mayonnaise (amount depends on number of rolls you are making)
Melted Butter
Freshly shredded Parmesan Cheese
Garlic Powder
Dried Parsley
Place  mayo in a bowl, melted butter in a bowl and  freshly grated parmesan cheese (not the stuff in the green Kraft can). 
Take the frozen ball of dough, dip the top half into each bowl starting with the mayo,  then the butter and finally the cheese.
Place roll into a well greased muffin tin (cheese side up).  Sprinkle with garlic powder and dried parsley and let rise according to the directions (usually 5-6 hours so you need to do this early on in the day)  Bake according to directions on the package.

Buttermilk Banana Bread


*Recipe from House of Smiths

3 cups of flour
1 1/2 cups sugar
1 1/2 tsp. baking soda
1 1/2 tsp. bakingpowder
1/2 tsp. salt
mix together and set aside

3 eggs
1 1/2 cups buttermilk
1/4 cup melted butter
4 large over ripe bananas-mashed
add to dry ingredients and mix well

Pour in to 7 greased mini loaf pans.  Bake at 350 degrees for 30-35 minutes.

A Confession and Fluffy Dinner Rolls

 So, about 12 years ago, my mother in law bought me on of these:

 At the time she gave me this awesome gift, I wasn't really in to cooking and baking like I am currently.  This lovely item has been just sitting in my cupboard.

    FOR 12 YEARS!

                                                      I think I have used it once or twice.

Well, since I have this new found love of cooking and recipes-I can't wait to add baking to my repertoire.  This little gadget  is going to come in handy and I can't wait to start putting this mixer to use.

Today, I made rolls from one of my favorite recipe sites.  Each recipe I have tried from this site has been a huge hit with everyone in our family.  Now, on to the Rolls.

Fluffy Dinner Rolls

3/4 C milk
4 T butter
3/4 C hot water
4 T sugar
1 t salt
4 - 4 1/2 C flour
1 heaping T yeast (I use active dry, but instant would work as well)

1. Pour your milk into a microwave safe container. These Pyrex glass measuring cups work fabulously. Add your butter to the milk and put it in the microwave for 1 1/2 minutes.
2. Preheat your oven to 170 degrees. While the milk is getting nice and toasty, turn on the tap to get your hot water. Temperature is important to making these rolls rise quickly. .
3. Put your milk/butter and hot water in the bottom of your Kitchen Aid Mixer. Add the sugar and salt. Then add 2 C of the flour...let it mix for 1 minute.
4. Add the yeast. Turn the mixer on and add the rest of the flour 1 C at a time.
5. You have enough flour when the dough scrapes the side of the bowl clean. Mix on medium speed for 5 minutes. 
6. Cover with plastic wrap and let sit for 5 minutes. You need the plastic wrap to trap the heat.
7. Take a stick of butter and coat the inside of a 9x13 pan.
8. Spray your counter, or a cutting board with cooking spray. Lay your dough on top of it.
9. Take a sharp knife, spray it with cooking spray and cut your dough into 12 pieces.
10. Gently round them into balls, and put them in your buttered 9x13 pan.
11. Put the pan into your warm 170 degree oven. Let them rise for about 20 minutes or until they have risen about 1 inch above the rim of the pan.
12. Leave your pan in the oven and turn the heat up to 350 degrees. Bake for 15 minutes. This time includes the time it takes the oven to increase in temperature.  Bake until golden brown.
13. Brush with a little softened butter and serve warm.

Buttery Cornmeal Crescent Rolls

*Makes 2 dozen rolls
2 cups milk
2/3 cup yellow corn meal
1 ½ tablespoons INSTANT yeast- (see note below)
½ cup (1 stick) butter
1/3 cup granulated sugar
1 teaspoon salt
3 large eggs
5 ½ – 6 cups flour

Note: if you need/want to use active dry yeast instead of instant yeast, change the amount of yeast to 2 tablespoons active dry and dissolve the yeast in 1/2 cup warm water and 1 tablespoon sugar. Let the yeast mixture activate and foam (approximately 5 minutes) before adding it to the cornmeal mixture.

Heat the milk to just below a boil so bubbles are just appearing around the edges (this is called scalding milk). Add the cornmeal and cook and stir until thickened, lowering the temperature if needed so the mixture doesn’t boil.


Pour the cornmeal/milk mixture into the bowl of a stand mixer or a large bowl and let cool until lukewarm. Add the yeast, butter and sugar (if you dissolved active dry yeast with a bit of water and sugar until it foamed, add it now). Mix. Add the salt and eggs. Mix well. Add the flour gradually until a soft dough forms.
Transfer the dough to a lightly greased bowl covered with lightly greased plastic wrap and let rise until doubled.
Divide the dough into three portions and roll each into about an 8-10 inch circle. Brush the top lightly with butter. Cut into 8 wedges and roll each wedge up starting from the wide end so it forms a crescent roll shape. Place each roll on a lightly greased baking sheet, spacing about 1-2 inches apart to allow for rising. Cover lightly with greased plastic wrap. Let the rolls rise until doubled.
Bake at 350 degrees for 10-12 minutes,   ( * mine took an additional 2 minutes) until lightly browned. Brush with butter while still warm.

Strawberry Bread

Ingredients:
  • 3 c. flour
  • 2 c. sugar
  • 1 t. baking soda
  • 1/2 t. cinnamon
  • 1 t. salt
  • 4 eggs
  • 1-1/4 c. vegetable oil
  • 2 c. fresh, sliced strawberries
Method:

Mix the flour, sugar, baking soda, cinnamon and salt in a large bowl. Add the eggs, oil and strawberries and mix just until moistened. Spoon into 2 greased and floured loaf pans. Bake at 350 for 1 hour and 10 minutes. Cool in the pans for several minutes. Remove to wire racks to cool completely.

Breadsticks

Ingredients:
1 ½ cup warm water
1 Tablespoon yeast
2 Tablespoons sugar
3 ½ cup flour
½ tsp salt
Butter for pan
*salt, garlic powder, parmesan cheese, parsley

Dissolve yeast in warm water. Add sugar and let it sit and bubble for a few minutes. Add the salt and flour. Knead for 3 minutes. Let the dough rest for 10 minutes.  Melt 3-4 Tbsp of butter and pour most of it onto a cookie sheet. Roll dough to cover cookie sheet. Cut to desired width, then twist and lay  on cookie sheet. Brush remainder of butter on breadsticks and sprinkle with garlic salt, parmesan cheese, and parsley (or whatever seasonings you like). Raise for 10-20 minutes. Preheat your oven to 375 and bake for 20 minutes, or until golden.

15 Minute Cream Bicuits


I have to say, these are probably my new favorite thing.  Try them, and when you do, let me know if you LOVE them as much  as we do.

Recipe from Real Mom Kitchen
  • 2 cups all purpose flour
  • 2 1/2 teaspoons sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1 1/2 cups heavy cream
 Preheat oven to 425°F degrees.  Spray a baking sheet withe cooking spray.
 In a medium bowl, mix together dry ingredients and stir  to combine.
Add Cream, Stir to combine.
Put dough on a lightly floured surface.
Knead briefly (30 seconds) until dough comes together.
Shape dough into a long rectangle and cut in half length-wise and then cut into pieces horizontally.  Arrange on baking sheet.
 Bake  in oven on middle rack for 15 minutes- until golden brown.

Orange Cranberry Bread

 Ingredients
2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup butter
1 egg, beaten
1 teaspoon grated orange peel
3/4 cup orange strawberry banana juice
1 1/2 cups dried cranberries
Directions
Combine flour, sugar, baking powder, salt and baking soda into a large bowl.  Cut in butter until mixture is crumbly.  Add egg, orange peel, and orange juice all at once; stir until mixture is evenly moist.  Fold in cranberries.  Spoon into a greased 9 x 5 x 3-inch loaf pan.  Bake at 350 degrees for 1 hour and 10 minutes, or until a toothpick inserted in center comes out clean.  Remove from pan; cool on wire  rack.

When I Grow Up and a Biscuit Recipe





Yesterday, Destrie says to me, "Guess what I'm going to be when I grow up?" Then he tells me, "I'm going to be a food critic!"
I guess all these "recipe reviews" are rubbing off on him! This morning, I was making biscuits when Destrie woke up. He came into the kitchen and asked if he could help. I gave him his own ball of dough to roll out, he cut out the biscuits, put them on his own little baking sheet, and we baked them. He had so much fun and he loved the biscuits.

Freezer Biscuits

4 cups flour
2 TBs. baking powder
1 1/2 tsp salt
1 tsp sugar
1/2 tsp soda
1/2 cup butter
16oz sour cream
3-5 tsp water

Mix dry ingredients in a bowl. Cut in butter until there are small well blended pieces. Add sour cream and water, mix well. Knead and roll out to 1 inch thick. Cut with biscuit cutter. Bake at 425 for 15-17 minutes on an ungreased baking sheet.

**Can freeze individually on a cookie sheet. When frozen solid, place in a freezer bag to store. When ready to use, place frozen biscuits on ungreased cookie sheet. Bake at 425 for 15-17 minutes or until top is golden.

Corn Bread and Honey Butter

Ingredients:
1 yellow cake mix
2 Jiffy cornbread mixes
Oil, milk, and eggs according to package (replace all water with milk)

Preheat oven according to directions on cake mix box.
Combine cake mix and cornbread mixes in a large bowl.
Add eggs, oil, and milk according to package directions (replace all water with milk).
Mix together according to cake mix directions. Bake according to cake mix directions

Honey Butter

2 cubes real butter, (close to room temp- works best when slightly chilled still.)
2/3 C honey
¾ C powdered sugar

***If your butter is too soft, you'll end up with a gooey mess, leave it out on the counter for about 20 minutes or so before beating and it turns out nice and fluffy

Place all ingredients in a bowl and beat with an electric hand-mixer for about 30 seconds.
