Lemon Melts


*Recipe from my cousin, Christa Young

Ingredients:
1 c. soft (not melted butter)
2/3 c. corn starch
1/2 c. powdered sugar
1 c. flour

Directions:
Creme together the butter and sugar, then add the cornstarch and flour. Mix well, drop by teaspoons onto ungreased baking sheets. Bake at 325 for 7-10 min. Do not brown. Make small..they are rich..Frost when cool.

Frosting Ingredients:
1/4 c. butter
juice of 1 lemon
grated lemon peel
1/2 lb. powdered sugar

Mix butter and powdered sugar, gradually add lemon juice until desired consistency and add lemon peel.

Lemon Cake Cookies


Cookies
  • Lemon Cake Mix
  • 1/2 Cup Oil
  • 2 Eggs
  • 2 Tbs. water
Mix together. Drop by spoon fulls onto a baking sheer and sprinkle with sugar. Place on greased cookie sheet and bake at 350 for about 10 minutes.

Frosting
  • 1 Package Cream Cheese
  • 2 Cups Powder Sugar
  • 2 Tbs. Milk
  • 2 Tbs. Butter
Mix cream cheese until creamy and then add following ingredients.

Flourless Peanut Butter Chocolate Chip Cookies


This recipe and photo came from the Real Mom Kitchen Blog

1 cup creamy peanut butter
1 cup sugar (I used 1/2 cup brown sugar & 1/2 cup white sugar)
1 egg
1 teaspoon vanilla extract
Pinch of salt
1 teaspoon baking soda
3/4 cup chocolate chips (I used semi-sweet)

1. Preheat the oven to 350 degrees. Spray 2 cookie sheets with cooking spray.
2. Mix the peanut butter and sugar together until creamy and smooth.
3. Add in the egg and vanilla extract. Mix until well combined.
4. Stir in the salt, baking soda, and chocolate chips.
5. Spoon dough into balls, about 1 Tablespoon of dough for each cookie. Place them on the cookie sheets, about 2 inches apart.
6. Smash with a fork and sprinkle with sugar. Bake for 10-12 minutes. Let them sit on the cookie sheet for a couple of minutes. Move to a wire rack and cool. Make sure you don’t over bake.

Kiley's favorite Soft Chocolate Chip Cookies



This recipe came from our ward cookbook and was submitted by our friend Summer. I don't usually bake cookies, but Kiley does and she bakes these often. She has given them to several of her friends at school and they are always a big hit.

Ingredients:
1 cup butter-softened
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp. vanilla
2 1/4 cups flour
1 tsp. baking soda
1/8 tsp. salt
1 small package vanilla pudding
1 package chocolate chips

Directions:
Cream butter and sugar together. Add eggs and vanilla. Mix. Add dry ingredients. Mix well. Fold in chocolate chips. Roll them into a 1 1/2 inch size balls and put on cookie sheet. Bake at 375 degrees for 8-10 minutes.
