Muenster Melts



This is more of an idea than a recipe...courtesy of my husband, Kile. He has been making these for years at work. My parents gave him a couple packages of Muenster Cheese, along with some other stuff for his birthday-because they knew it was his favorite. He made these for us to dip in our tomato soup...they are also good all on their own.

Items needed:
White Bread
Sliced Muenster Cheese

Directions:
Top each slice of bread with Muenster cheese. Put in a toaster oven and cook until cheese is melted and bread is toasted.

I was talking to my mom about this "recipe" the other day, and she told me that her dad, my Grandpa Harvey used to make these all the time!

Sassy Tailgate Sandwiches

*Recipe adapted from
Taste of Home Cooking Magazine




12 Hawaiian sweet rolls, split
1 lb. shaved Black Forest ham
12 oz. Gruyere cheese-sliced
1/2 (8 oz.)Philadelphia Chive and Onion Cream Cheese
1/2 cube melted butter
1/2 cup I Can't Believe It's Not Butter
1/4 c. Grated Parmesan cheese
1 Tbsp. Worcestershire sauce
1 1/2 tsp. minced onion flakes

Arrange bottoms of rolls in greased 9x13 baking dish.
Layer ham and cheese on each roll.
Spread cream cheese on each roll top.
Place roll on top of cheese.
In a small bowl, combine the butter, parmesan cheese, Worcestershire sauce and onion flakes.
Pour over sandwiches.
Let stand for 20 minutes.
Cover with tin foil and bake at 350 degrees for 20 minutes.

French Dip Sandwiches in the Crockpot

1  3-4 pound beef roast
salt and pepper
2  1 oz packages Lipton Onion Soup mix
4  C hot water
beef bullion cubes
8  rolls   
Mozzarella Cheese Slices (optional)
softened butter
 Sprinkle your roast with salt and pepper and place it in the crock pot.  
 Sprinkle the Onion Soup mix over the top. 
 Let your bullion cubes dissolve in the hot water and then pour it over the roast.
 Put the lid on your crock and cook on high for 6-8 hours. Take the roast out and shred it up with a fork about 1 hour before you are ready to serve. Put the shredded beef back in the crock and let it cook in all the juices for the last hour.
 Spread just a bit of softened butter on your rolls. Toast them on a griddle. Then add the meat and some cheese. 
 Pour the hot juices left in the crock into small bowls for dipping.

Chicken Salad Croissant Sandwiches

  • 3 cups cooked chicken, diced
  • 1 cup celery, diced
  • 1 green onion, diced
  • 4 hard boiled eggs, diced
  • 1 cup mayonnaise
  • 1/4 cup Miracle Whip
  • 1 Tbsp. lemon juice
  • 1/4 tsp salt
  • 3/4 cup cashews
  • lettuce leaves
  • 10-12 large croissants
  1. Mix chicken, celery, onion, eggs, mayo, Miracle Whip, lemon juice, and salt together.
  2. Slice open croissants and on one half of croissant place a piece of lettuce followed by the chicken mixture.
  3. Then sprinkle with cashews and top with over half of croissant.  Repeat until all croissants are filled.

    Spam and Cheddar Cheese Melts


    You have all heard of Spam right?  Ham in a can...sounds delightful doesn't it?  In case you can't tell, I'm kidding. Ham in a can...kind of weird.   Anyway, I grew up eating the following recipe and it's really pretty good.  It's super easy to make and most of these ingredients are things that I always have on hand... minus the Spam, that was a special purchase!

    Ingredients:
    1 can Spam
    2 hard boiled eggs-diced
    2 Tbsp. dill pickles-diced
    2 green onions-sliced
    1/2 tsp. mustard
    1 c. grated cheddar cheese
    4 Tbsp. mayonaise
    salt and pepper to taste

    Directions:
    Break up Spam with a fork, add all ingredients in a bowl and stir to combine.  Spoon mixture on to hard rolls.  Place in a hot oven until cheese is melted.

    Paula Deen's Croque Madame


    Ingredients

    • 8 slices sourdough bread
    • 8 ounces Gruyere, very thinly sliced-(I used cheddar and mozzarella.)
    • 12 ounces smoked ham, very thinly sliced
    • 2 to 3 tablespoons mayonnaise
    • 5 tablespoons unsalted butter
    • 4 extra-large eggs
    • Salt and pepper

    Directions

    Preheat oven to 400 degrees F.
    Butter 1 side of each bread slice.
    Set half of the slices of bread buttered side down in the griddle or cast iron skillet, and cover each with a slice of cheese. Place 3 or 4 slices of the ham over the cheese, and place the top slice of bread over the ham, buttered side up. Heat griddle or skillet over medium heat. Cook sandwiches until bottom is golden brown and cheese is melted, about 3 minutes per side. Remove sandwiches and place on a plate. Spread a thin layer of mayonnaise on the top of each sandwich, and then place a slice of cheese on top. Put the sandwiches back onto the griddle or skillet then place in oven, cooking until golden brown and cheese is melted, about 5 minutes.
    Melt 1 tablespoon butter in skillet over high heat. Cook the eggs sunny side up.
    Place 1 fried egg atop each sandwich. Season egg, to taste, with salt and pepper. Serve sandwich immediately.
    *Can serve with hollandaise sauce- which I will try next time!
