Salted Caramel Popcorn


Recipe and Photo from Cookies and Cups

Ingredients
  • 1/2 cup unpopped popcorn kernels (about 16 cups popped corn)
  • 1 cup salted butter
  • 1 cup light brown sugar
  • 1/3 cup light corn syrup
  • 1 1/2 - 2 tsp kosher or sea salt, divided
How to Make
  1. Preheat oven to 300°
  2. Line a large baking sheet with parchment paper or a silicone mat. Set aside.
  3. Pop popcorn kernels using air popper into a large bowl.
  4. In a small saucepan melt butter, brown sugar, corn syrup and 1 tsp salt together over medium heat. Bring to boil. Boil for 4 minutes without stirring.
  5. Pour caramel mixture over popcorn and stir to coat evenly.
  6. Pour popcorn into lined pan, sprinkle remaining salt on top (1/2 tsp - 1 tsp depending on your personal taste preference) and place in oven. Bake for 30 minutes, stirring every 10 minutes.
  7. Allow popcorn to cool on a parchment lined counter.

Microwave Caramel Popcorn




Directions

  1. Place the popped popcorn into a large brown paper bag. Set aside.
  2. In a 2 quart casserole dish, or other heat-proof glass dish, combine the brown sugar, margarine, corn syrup, salt and vanilla. Heat for 3 minutes in the microwave, then take out and stir until well blended. Return to the microwave, and cook for 1 1/2 minutes. Remove from microwave, and stir in the baking soda.
  3. Pour syrup over the popcorn in the bag. Roll down the top once or twice to close the bag, and shake to coat the corn. Place bag into the microwave, and cook for 1 minute and 10 seconds. Remove, shake, flip the bag over, and return it to the microwave. Cook for another 1 minute and 10 seconds. Dump the popcorn out onto waxed paper, and let cool until coating is set. Store in an airtight container.

Smore's Carmel Popcorn

16 cups popped corn

1 C brown sugar
1/4 C Karo syrup
1/2 C butter

Cook sugar, syrup and butter in a glass bowl in microwave on high for one minute. Stir and repeat for a total of five minutes. Should be hot and bubbley.

Add:

1/2 tsp baking soda
1/2-1 tsp vanilla

Mix until foamy. Put popped corn into a brown grocery bag. Pour syrup into bag. Stir to coat. Fold bag over. Place in microwave and microwave for one minute and shake. Repeat. Microwave 30 seconds and shake. Repeat.

Pour popcorn out to cool on wax paper.

Now, you will need:
2-3 C of miniature marshmallows
2-3 C of Golden Graham cereal
1 pkg. of chocolate chips (I used milk chocolate)

Spread caramel corn onto two parchment lined cookie sheets to cool. Sprinkle with marshmallows and cereal. Melt chocolate chips and then drizzle chocolate over mixture. Allow chocolate to set up.

Carmel Popcorn

Ingredients:
3 bags microwave popcorn
1 cup white Karo syrup
2 cups brown sugar
2 cubes butter
1 tsp. soda

Directions:
Pop 3 bags of microwave popcorn.
Put each bag of popped corn in a bowl and separate the popcorn and the old maids. Put all the popcorn in a big bowl and set aside.
In a pot add  karo syrup and  brown sugar---stir together over medium heat till mixed then, bring to a boil and boil for 1 minute,
Add  butter, stir until melted--add soda and stir well. .
Pour over  popcorn.

Monster Munch




Recipe by Our Best Bites

1 package Almond Bark (1 lb)
12 C popped popcorn
1 C candy corn
1 C dry roasted, salted peanuts
1/2 C Reeces Pieces

Pop popcorn and place in a large bowl.   Pour peanuts, candy corn, and Reeces pieces on top.  Take a large knife and break up almond bark. Melt according to package directions.
Pour over popcorn mixture.
Stir until everything is well coated and then spread out onto waxed paper, parchment, or foil. Let sit until completely dry and then break up into clumps.
