Potato Leek Pizza



Ingredients
1/2  cup Hormel real bacon bits 
3 leeks, rinsed well to remove grit and thinly sliced
1 loaf store-bought frozen bread dough, thawed and left to rise according to package instructions
5 small red potatoes, sliced paper thin with a mandolin or sharp knife
Kosher salt
1 pound fresh mozzarella, sliced thin
4 ounces Feta cheese, crumbled
1/3 cup grated Parmesan
Freshly ground black pepper
Extra-virgin olive oil, for drizzling

Directions

Preheat the oven to 475 degrees F.

In a skillet, heat the bacon for a couple minutes.   Add the leeks and saute until soft, about 3 minutes.

Pull or roll the bread dough into a rectangle and place on a baking sheet. Arrange the potatoes in a single layer all over the crust, slightly overlapping the edges. Sprinkle the potatoes lightly with salt, then lay the mozzarella slices in a single layer on top of the potatoes. Arrange the leeks and bacon on top of the cheese.  Next, add the Feta cheese, grated Parmesan and freshly ground black pepper. Drizzle with olive oil.




Bake until the edges of the crust are golden brown and the cheese is melted and bubbly, 11 to 13 minutes.  ***Mine was still doughy at this point, so I covered it loosely with tin foil and cooked an additional 10 minutes.

Cut into squares and serve immediately.

Ricotta Cheese Pizza with Chicken, Broccoli, and Mushrooms

Ingredients

  • 1 tablespoon butter
  • 1 1/2 cups rotisserie chicken-shredded
  • 1 (8 ounce) container ricotta cheese
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • salt and ground black pepper to taste
  • 1 (12 inch) pre-baked pizza crust
  • 2 cups shredded mozzarella cheese
  • 1/2 cup chopped fresh broccoli
  • 1 (3 ounce) can sliced mushrooms, drained

Directions

  1. Preheat an oven to 325 degrees
  2. Combine the ricotta cheese, 1 tablespoon butter, garlic powder, oregano, salt, and pepper in a microwave-safe bowl. Heat in microwave for 1 minute; stir to combine. Spread the mixture over the pizza crust. Scatter the mozzarella cheese evenly over the pizza. Arrange the cooked chicken, broccoli, and mushrooms evenly on top of the pizza.
Bake in the preheated oven until the cheese is melted, about 20 minutes

Candy Corn Pizza

Ingredients:
store bought pizza crust
pizza sauce
mozarella cheese
cheddar cheese
Directions: Spread on pizza sauce, make a ring of cheddar cheese around the out side of crust.  Make a circle of mozarella cheese in the middle.  Bake according to package directions.

Zucchini Flat Bread

  • 1 large Boboli® pizza crust (I used a Pillsbury Pizza Crust)
  • 1 Tbsp. olive oil
  • 1 zucchini, sliced into 1/8 inch slices (you want about 2 dozen slices)
  • 1 1/2 tsp. Johnny’s Garlic Spread & Seasoning (Couldn't find this- used garlic powder)
  • 1 cup mozzarella cheese (I just eyeballed it as to what looked good)
  • 1/2 of a small can sliced olives, drained
  1. Place zucchini slices on a baking sheet and cook at 425 degrees for 10-15 minutes. Keep an eye on these you just want to get them tender and about 1/2 the thickness they were originally. If you cook them too long they will burn.
  2. Brush top of pizza crust with olive oil. Arrange cooked zucchini slices on crust.
  3. Sprinkle seasoning over zucchini followed by cheese. Then top cheese with olives.
  4. Bake at 450 degrees for 5 or so minutes until cheese is nice and melted.
  5. Cut into squares.

Taco Pan Pizza


I adapted this recipe from one that I found on Allrecipes.com

Ingredients

* 1 (10 ounce) can refrigerated pizza crust
* 1/2 cup sour cream
* 1/3 cup mayonnaise
* 2 tablespoons minced fresh cilantro
* 1 Tbsp chopped jalapeno (from a can)
* 1 teaspoon sugar
* 1/2 teaspoon chili powder
* 1/4 teaspoon salt
* 1/4 teaspoon ground cumin
* 1 medium ripe avocado, peeled and cubed
* 2 teaspoons lime juice
* 8 oz. salsa
* 1/4 cup chopped green onions
* 1/3 cup sliced ripe olives
* 1 cup shredded Mexican blend cheese
* 1 lb. ground beef-browned
* 1 package McCormick Cheesy Taco Seasoning
* 3/4 cup milk

Directions

1. Unroll pizza dough and place in a greased 15-in. x 10-in. x 1-in. baking pan; flatten dough and build up edges slightly. Prick dough several times with a fork. Bake at 425 degrees F for 10-11 minutes or until lightly browned.

2. To browned Ground Beef add Taco Seasoning and Milk- follow directions on package

3. Meanwhile, in a bowl, combine the sour cream, mayonnaise, cilantro, jalapeno, sugar, chili powder, salt and cumin. Spread over cooled crust.


4. Toss avocado with lime juice; Set aside.

5. Spread ground beef over sour cream mixture.

6. Pour Salsa on top of ground beef.

7. Add on green onions, olives, and cheese.

8. Return to oven for a few minutes to melt cheese.

9. Remove from oven and sprinkle avocados on top of pizza.

Ham, Egg and Spinach Pizza


This recipe came from Ellie Krieger on the Food Network.

Ingredients

  • 1 store-bought baked thincrust pizza(I actually used Rhodes dough to make a pizza crust)
  • 4 cups (about 4 ounces) baby spinach leaves, thinly sliced
  • 2 teaspoons olive oil
  • 3 ounces prosciutto di Parma, thinly sliced ( I used ham.)
  • 1/2 cup grated Parmesan (1 1/2 ounces)
  • 3 cloves thinly sliced garlic
  • 4 eggs ( I used 5, since there are 5 people in our family)

Directions

Prepare Rhodes Dough to make a pizza crust. Bake according to package directions. Preheat oven to 450 degrees. Scatter spinach all over crust. Drizzle with oil. Evenly distribute ham, Parmesan and garlic on top of spinach. Crack eggs onto pizza, roughly positioning 1 yolk on each pizza quarter. Bake for 12-15 minutes, until spinach is wilted and egg whites are just fully cooked. Cut into slices.

* The kids and I thought this recipe would be better minus the eggs. Kile thought the eggs were ok, but a weird addition to the pizza.
