Ranch Salad Dressing/Thanksgiving Feast


In honor of the Thanksgiving holiday, this post is dedicated to our holiday feast. Our menu is the same every year, Turkey, Ham, Mashed Potatoes and Gravy (brown -for Madison and turkey) Corn, Tossed Salad w/Ranch Dressing, Cottage Cheese Jello Salad, Relish Tray with Ranch Dip, Rolls, Ritz Crackers w/ Easy Cheese, Stuffing, Banana Cream Pie, Cheesecake with Strawberry Topping and Turtle Pie. Whew... that's a lot of food! The recipe I will post today is for Ranch Dressing- a must have at our house.


Ranch Dressing
1 cup buttermilk
1 cup mayonaise-no fat free or light
salt and pepper to taste
3/4 tsp. garlic powder
3/4 tsp. onion powder
1 tsp. accent
parsley flakes
*stir to combine. refrigerate for at least an hour before serving.

Glazed Carrots

Ingredients

• 2 (16 ounce) packages fresh baby carrots
• 1/2 cup butter or margarine
• 1/2 cup packed brown sugar
• 2 (1 ounce) packages ranch salad dressing mix

Directions
1. Place carrots in a saucepan; add water to cover. Bring to a boil. Reduce heat; cover and cook for 8-10 minutes or until crisp-tender. Drain and set aside.
2. In the same pan, combine butter, brown sugar and salad dressing mix until blended. Add carrots. Cook and stir over medium heat for 5 minutes or until glazed.

Scalloped Potatoes

Ingredients

  • 1 (10.75 ounce) can Campbell's® Condensed Cream of Celery Soup (Regular or 98% Fat Free)
  • 1 (10.5 ounce) can Campbell's® Chicken Gravy
  • 1 cup milk
  • 5 medium baking potatoes, peeled and thinly sliced
  • 1 small onion, thinly sliced
  • 2 1/2 cups diced cooked ham
  • 1 cup shredded Cheddar cheese

Directions

  1. Stir soup, gravy and milk in bowl. Layer half the potatoes, onion, ham and soup mixture in 13x9x2" shallow baking dish. Repeat layers. Cover.
  2. Bake at 375 degrees F for 40 minutes. Uncover and bake 25 minutes. Top with cheese. Bake 5 minutes more or until potatoes are tender and cheese melts. Let stand 10 minutes.

Easy Pumpkin Muffins

Ingredients

1 package butter flavor yellow cake mix
1- 15 oz. can pumpkin puree
1 tsp. ground cinnamon
1/2 tsp. nutmeg
1/2 tsp. pumpkin pie spice
brown sugar

Directions

Preheat oven to 350 degrees.
Grease a 12 cup muffin tin.
In a large bowl combine all ingredients - except the brown sugar. Stir together.
Spoon equal amounts into each muffin tin.
Sprinkle a little brown sugar on top of the batter.
Bake for 20-25 minutes.
