Rotini Pasta Salad


  • 36  ounces  Rotini Pasta
  • 1 1/2cups Italian salad dressing
  •  1 1/2 cups mayonnaise
  • 3/4 teaspoon ground black pepper
  • 3/4 teaspoon salt
  • 3 cups chopped fresh cauliflower
  • 3 cups cubed Cheddar cheese
  • 3/4 cup chopped celery
  • 3/4 cup finely chopped green pepper
  • 1/2 cup Hormel Real Bacon Bits

Cook pasta according to package directions. Drain and rinse in cold water.  Mix Italian salad dressing, mayo, salt and pepper until combined.  Add mixture to pasta. Add remainder of ingredients and stir to combine.

Layered Drinks


Idea from:  Sisters Cafe

Directions:
Choose 2-3 drinks with different sugar contents for the layers (for example: 30 g sugar, 15 g sugar, 0 g sugar).  Now fill your cup with ice all the way to the top.  Pour the drink with the highest sugar content into the cup, filling it approximately one third full.  For the second layer, pour the second drink with the lower sugar content slowly through the ice to fill approximately the second third of the glass full.  Finally, pour the sugar-free or lowest sugar drink slowly through the ice until you’ve reached the top of the glass.  Enjoy!

I used these drinks.

*For a 4th of July Layered Drink use: Sobe Pina Colada, Gatorade Fruit Punch, G2 Blueberry-Pomegranate.

Sticky Chicken


Recipe from:
Megan Kenney and Mandy G Gonzalez

Ingredients:
6-8 chicken breasts
egg
flour

Prepare chicken into bite sized pieces. Coat with egg and flour. Fry in Oil until browned on both sides
(Can also do this with Deli chicken already cooked and breaded)

Sauce
1 1/2 C. sugar
1/2 C. ketchup
1 Tbsp .soy sauce
4 Tbsp. vinegar

Mix together and pour over chicken. Bake in a 9x13 baking dish @ 350° for 45 minutes.

Pumpkin Carrot Flax Muffins


Recipe from Sarah Francis

Ingredients:
1 cup buttermilk
1 cup of canned pumpkin  (add a little more for moister muffins)
1 egg
2 T. maple syrup
1 T. oil (canola or olive)
1 tsp vanilla
¼ cup of grated carrots-(can add 1/4 c. of  craisins and raisins also.)
*can add mini chocolate chips
Mix all these ingredients together until blended.

Add:
1 ½ cup whole Wheat Flour
¾ cup of oatmeal (can blend the oatmeal in the blender first, but it isn’t necessary).
2 T. ground flax seed (can find in the flour section)
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
½ tsp salt
½ cup sugar

Stir until blended. Spray a muffin tin with non-stick spray. Fill each muffin tin to the top.
Bake at 375 for 25 minutes.

Potato Salad


Recipe and Photo from Family Favorite Recipes

Ingredients:
5 medium potatoes
6 eggs, hard boiled
salt and pepper to taste
1/2 c. Mayo
1/2 c. sour cream
2 Tbsp. sugar
mustard, to taste 
 5 to 6 diced baby dill pickles

Boil potatoes (do not peel) for 45 minutes to 1 hour. Peel and dice potatoes AND eggs. Add salt and pepper and toss. Mix remaining ingredients separately and fold into potato mixture. Refrigerate overnight (or at least 6-8 hours).

Cookie Salad


Ingredients:
2 c. buttermilk
12 oz Cool Whip
2 small packages vanilla instant pudding
1 large can pineapple tidbits-drained
2 small cans mandarin oranges-drained
1 package fudge stripe cookies

Directions:
Whip together buttermilk, Cool Whip, and pudding.  Add pineapple and mandarin oranges.  Mix all ingredients well. Chill for 4 -5 hours.  Before serving-crush cookies and add to salad.

Graham Cracker Pudding Sandwiches


Ingredients:
 1 small instant pudding mix-
  (I used chocolate)
 1 cup milk
 1 container Cool Whip
 1  8 oz package of Cream Cheese-softened
 Graham Crackers

Directions:
 Mix pudding packet with the milk until it begins to thicken.  Then add one container of Cool Whip and Cream Cheese, mix until smooth.
Spread mixture on Graham Cracker and top with another Graham Cracker to make a sandwich.
Freeze.
