Lemon Cream Chicken

1/2 cup plus 1 T. flour divided
1/2 t. salt
1/2 t. pepper
6 boneless skinless chicken breast halves
1/4 c. butter
1 c. chicken broth
1 cup whipping cream, divided
3 T. lemon juice
1/2 pound fresh mushrooms, sliced

In a large resealable plastic bag, combine 1/2 c. flour, salt and pepper. Add chicken and shake to coat. In a large skillet, cook chicken in butter for 8-9 minutes on each side or until juices run clear. Remove chicken and keep warm.

Add broth to the drippings. Bring to a boil over medium heat; stir to loosen browned bits from the pan. Simmer, uncovered for 10 minutes or until broth is reduced approximately 1/3 cup. Sir in 3/4 c. cream, lemon juice and mushrooms. Cook over medium-low heat for 5 minutes.

Combine remaining flour and cream until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Return chicken to skillet and heat through.

Beefy Bean Burritos

* 1 pound lean ground beef
* 1 can refried beans
* 2/3 cup enchilada sauce
* 1/2 tablespoon chili powder
* 1 teaspoon garlic powder
* 1 1/2 cups shredded colby/jack cheese (I used cheddar cheese.)
* 10 large flour tortillas

1. Brown and drain meat.
2. Add all remaining ingredients, except tortillas. Stir the mixture and heat to a simmer/boil.
3. Put about 1/2 cup of the mixture in each flour tortilla, fold the tortillas into burritos, and serve.

Fruit Salsa with Cinnamon Tortilla Chips

Ingredients

* 1 Fuji apple - peeled, cored and diced
* 1 cup sliced fresh strawberries
* 2 kiwis, peeled and sliced
* 2 bananas, peeled and sliced
* 1 tablespoon fresh lime juice
* 2 tablespoons white sugar
* 1/2 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg

* 1 cup oil for frying
* 6 (10 inch) flour tortillas
* 3 tablespoons white sugar
* 1 tablespoon ground cinnamon

**I was in too big of a hurry to fry the Cinnamon Tortillas. A person on Allrecipes, suggested using Graham Crackers to dip in the salsa and that is what I did. I will try the Cinnamon Tortilla Chips next time.

Directions

1. In a medium bowl, mix together Fuji apple, strawberries, kiwis, bananas, lime juice, white sugar, cinnamon and nutmeg. Cover and chill in the refrigerator approximately 20 minutes.
2. Heat oil in a medium heavy saucepan to 375 degrees F (190 degrees C).
3. Slice flour tortillas into triangles. Carefully place tortilla triangles into the hot oil and fry until golden brown, 2 to 4 minutes. Drain on paper towels.
4. Place white sugar and cinnamon in a large ziplock plastic bag. Drop fried tortilla triangles into the bag and shake to coat.
5. Serve the cinnamon chips warm with the chilled fruit salsa.

New Food Finds


We came across these crackers during Christmas time. Kiley absolutely "loves" them and requests often that I pick up a box if I'm at the grocery store. The regular are good, but the cheddar ones are our favorite.

Taco Lasagna


This is a recipe that I got from my friend Julie Finlinson.

Ingredients:
1 lb. Ground Beef
1 can of Green Chile's
1/2 C. chopped Onion
2/3 C. Water
1 envelope Taco Seasoning
1 (15 oz.) can Black Beans, drained
1 (14.5 oz.) can Diced Tomato's with Lime and Cilantro, undrained
6 (8 inch) Flour Tortillas
1 (16 oz.) can of Refried Beans
3 Cups of Shredded Mexican Blend Cheese (cheddar is fine if you don't have the other)

In a large skillet, cook the beef, chile's and onion over medium heat until cooked. Add water and taco seasoning. Bring to a boil ; reduce heat and simmer for 2 min. Then add black beans and tomatoes. Simmer uncovered for 10 min.
In a greased 9x13 pan place 2 tortillas. Spread with half of the refried beans. Put half of the meat mixture on top of beans. Sprinkle with 1 cup cheese. Repeat layers. Top with remaining 2 tortillas and cheese. Cover and bake at 350 degrees for 30 min.

**** I served this with topped with Sour Cream.

3. Put about 1/2 cup of the mixture in each flour tortilla, fold the tortillas into burritos, and serve. (Store the extra burritos in a Ziploc in the refrigerator. To reheat the cold burritos microwave them for 30 seconds, flip, 30 seconds.)

Brown Sugar Muffins



Ingredients:
1 cube butter-softened
1 cup brown sugar
1 beaten egg
1 cup milk
2 cups flour
1/2 tsp salt
1 tsp baking soda
1 1/2 cups chocolate chips

Combine ingredients. Mix well with a fork. Put batter in a greased muffin tin cups. Bake at 350 for 25 minutes.

Cheesecake Squares


Recipe and Photo by: Our Best Bites

Ingredients:

1 package Pecan Sandies Cookies, divided
1 1/2 Tbsp. butter, melted
11 oz. cream cheese -
(1 8-oz. package + 3 oz. of another package, not low-fat), softened
2 eggs
2/3 c. sugar
pinch salt
1 1/2 tsp. vanilla
1/2 tsp. almond extract
2 c. Breakstones Sour Cream
1 1/4 c. strawberry sauce or strawberry jam, divided (recipe below; you can also use jarred strawberry topping or canned strawberry pie filling)***I used some homemade raspberry freezer jam that I had.

Instructions:

Preheat oven to 375.

Spray a 9x13 pan with non-stick cooking spray. In a food processor, process 3/4 of the Pecan Sandies (reserve 6). Mix with melted butter and lightly press onto the bottom of the pan. Set aside.

In a large bowl or the bowl of a stand mixer, combine cream cheese eggs, sugar, salt, vanilla, almond extract, and sour cream. Beat on high for 4-5 minutes. Pour 3/4 c. of the strawberry sauce over the batter, spreading gently to cover the surface (it doesn't have to be perfect). Spread remaining cheesecake batter over the strawberry layer and then spoon remaining 1/2 c. of strawberry sauce over the batter. Being careful not to cut into the surface of the cookie crust, swirl the strawberry mixture with a butter knife.

Bake at 375 for 25-35 minutes or until center is jiggly but not liquid. While baking, process remaining 6 cookies. During the last 10 minutes of baking, sprinkle the cookies on top of the cheesecake. Chill for at least 8 hours and cut into squares. If desired, drizzle remaining strawberry sauce over the individual squares.

Kiley's favorite Soft Chocolate Chip Cookies



This recipe came from our ward cookbook and was submitted by our friend Summer. I don't usually bake cookies, but Kiley does and she bakes these often. She has given them to several of her friends at school and they are always a big hit.

Ingredients:
1 cup butter-softened
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp. vanilla
2 1/4 cups flour
1 tsp. baking soda
1/8 tsp. salt
1 small package vanilla pudding
1 package chocolate chips

Directions:
Cream butter and sugar together. Add eggs and vanilla. Mix. Add dry ingredients. Mix well. Fold in chocolate chips. Roll them into a 1 1/2 inch size balls and put on cookie sheet. Bake at 375 degrees for 8-10 minutes.

Baked Chicken Taquitos


Ingredients:
1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic, or garlic powder
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken
1 C grated Cheddar cheese
Small flour tortillas
salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.

Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.

Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.

Then roll it up as tight as you can.

Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top.

Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

Dip them in salsa, sour cream, or ranch dressing.

Cilantro Lime Rice


I was @ my mom's house and was looking through a cookbook that she had. It was a cookbook that the town of Lewiston had put together. I had been looking for a good Cilantro Lime Rice recipe so I thought I would give this one a try.

Ingredients:
1 cup rice (uncooked)
2 cups chicken broth
1 Tbsp. margarine
2 cloves minced garlic
1 tsp. grated lime zest
1/8 tsp. pepper

Bring water and chicken broth to a boil. Add remaining ingredients. Cover and reduce heat slightly. Cook for approximately 20 minutes until liquid is gone.

Add 2 Tbsp. Chopped cilantro to rice and fluff with a fork.

New Food Finds




I came across these drink mixes awhile ago and we love them! I think they are as good as the Crystal Light brand. Our very favorite flavor is the Strawberry Orange Banana.

In recent weeks, I have come to realize that we are pretty busy on Friday nights. It's not really convenient to try and cook when everyone is running in different directions. From now on, I will just plan meals for Sunday through Thursday.
