Pumpkin Curry Soup



Recipe from Mary McBride

2 cups canned pumpkin
1/2 c onion chopped
2 cloves garlic
4 c water
6 chicken bullion cubes
1 1/2 tsp curry powder
1/4 tsp pepper
1 1/2 tsp salt
2-3 cups cooked rice
2 c half and half
3 cups cooked chicken
1 bay leaf
pinch of nutmeg

Saute onion and garlic. Add everything but cream, and rice. Reduce heat and simmer for about 30 min. Add rice and cream at the end. Heat through. Remove bay leaf and serve.
